Blueberry Syrup

I was jazzed when tasked to use up my giant bag of organic frozen blueberries and this simple blueberry syrup is perfect to pour over pancakes or use to sweeten a cocktail! I bottled one up for a Thanksgiving gift. Easy to do and lasts two weeks, no one will complain if you show up with this sweet treat!

2 cups frozen organic blueberries
½ cup honey
1 cup water

2 Tablespoons water
1 Tablespoon cornstarch

Directions: In a small bowl combine 2 tbl water with cornstarch and set aside. In a medium saucepan combine water, honey, and blueberries. Bring to boil, reduce heat and simmer for about 10 minutes. Stir occasionally. Add your water and starch mixture. Give away or store in the refrigerator for up to 2 weeks!
