Have you ever made a shrub? Shrubs are blends of fruit, sugar, and vinegar that were once created during the Colonial Era to preserve fruit post-harvest. Shrubs use vinegar to provide a tangy bite, which balances perfectly with the sweetness of the fruit. Vinegar works the same way a citrus does in your cocktails, it quenches thirst, cleanses the palate and is super refreshing.

4 cups blueberries
2 cups cider vinegar
2 cup sugar

Directions: Combine blueberries and vinegar in a bowl. Cover tightly and refrigerate for 3 days. Pour the vinegar-marinated blueberries into a sieve and discard the solids. Pour the blueberry liquid into a medium saucepan and add the sugar.
