Weekday Spinach, Turkey & White Bean Lasagna

I won't be home tonight, but no fear this turkey spinach lasagna is assembled and acg's cheesy noodle dinner looks pretty good (and peaceful - I talk a lot ;)! Make ahead, refrigerate in a throw-away container and make the night needed!

 lasagna noodles
1 package of lean ground turkey breast
1 can white beans
2 cups spinach
1 cup shredded mozzarella
1/2 cup parmesan
2 eggs
1 cup tomato sauce
2 cloves of garlic
1/2 onion
thyme, salt, pepper and cayenne

Directions: Saute onion, garlic, thyme, salt, pepper, cayenne. Add turkey and break up with wooden spoon. Add 1/2 cup tomato sauce and beans. Cook until turkey is completely cooked thru. In large bowl combine cheeses, spinach and egg. In square disposable container coat the bottom with tomato sauce. Place lasagna noodles on top. Top noodles with spinach cheese mixture and the turkey & bean mixture. Tomato sauce, noodles, spinach cheese and turkey & bean. Layer until you finish the top of the lasagna with noodles and cover with parmesan cheese.

Bake at 375 degrees for 30 minutes.
