Thanksgiving Leftover Galore!

The day after food is arguably better! Don't worry, these recipes are low maintenance and easy peasy in case you had a few too many glasses of wine or are still in a turkey induced coma.

Pretzel Roll Turkey Sandwiches

Directions: Toast your pretzel buns, spread cranberry horseradish mustard on top, add your tipsy goat cheese, turkey and sandwich!

Deconstructed Apricot Cinnamon Roll

With our leftover flaky golden biscuits we made a deconstructed apricot cinnamon roll!

6 biscuits, 1/2 cup sugar, 2 tsp cinnamon, 2 eggs, 1/2 stick butter (melted), 4 tbl apricot preserves

Directions: Cut biscuits in cubes. Combine all ingredients in bowl and place in a 8x8 brownie pan (yes I used a disposable one - I am in need of a dish duty break!). Bake at 350 degrees for 30 minutes.

Stuffing Hash with Fried Egg

Directions: Toast stuffing in frying pan until crispy. Fry an egg and top.

White Bean Turkey Chili

2 pounds turkey breast
2 teaspoons ground cumin
1/2 teaspoon ground black pepper
1 package of mushrooms, chopped
1 jar of Alfredo sauce
1 15 oz can kidney beans, rinsed and drained
1 cup chicken broth
1 yellow onion, chopped
1 4 oz can diced green chile peppers
6 cloves garlic, minced

Directions: Combine all ingredients in a crock pot. Cook on low for 4-5 hours or high for 2-2.5 hours. Serve warm with a bit of cheese.
