Truffle Mac & Cheese with Lobster and Buttered Pretzel Crumbs

1 pound cavatappi
1 quart milk
1 stick butter, divided
½ cup flour
6 cups cheese
½ tsp pepper
½ tsp nutmeg
1 tsp truffle oil
1½ pounds cooked lobster meat
1 cup pretzels, crushed

Directions: Cook pasta according to the directions on the package, 6 to 8 minutes. Drain. Heat milk in a small saucepan. In a large pot, melt 6 tablespoons of butter and add the flour. Whisk over low heat for 2 minutes. Add the hot milk and cook for a couple more minutes whisking. Remove from the heat and add cheese, salt, pepper and nutmeg. Add the cooked noodles & lobster. Place the mixture in 6 to 8 individual gratin dishes. Melt the remaining 2 tablespoons of butter and pour over ground up pretzels. Sprinkle crumbs on top and bake at 375 degrees for 30 to 35 minutes. Adapted from the lovely Barefoot Contessa.
