Root Beer Barbecue Chicken & Waffles

Monday night comfort food for #NationalWaffleDay! Chicken and Waffles with root beer barbecue sauce.

a little olive oil
1/2 an onion, diced
2/3 cup ketchup
1/2 cup of root beer
2 tbl molasses
2 tbl lemon juice
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp cayenne
paprika, cumin, garlic powder, s&p

Directions: In medium saucepan sautee onions in olive oil. Add ketchup, root beer, molasses, lemon juice, chili powder, garlic powder and cayenne. Bring to boil, turn down heat, and allow to simmer for 15 minutes stirring occasionally.

Pound chicken, season with paprika, cumin, garlic powder, s&p and grill at 450 degrees for 10 minutes, turning once. All of the juices will release from the chicken and after allowing to cool for a few minutes rip the chicken apart with your hands to shred. Pour sauce on top of the shredded chicken. 

Toast waffles, top with chicken, pour maple syrup on top! Adapted from Weber's New Real Grilling, an awesome book!

And for Homemade Waffles...

3 tbl butter
1.5 cup flour
1.5 tsp baking powder
1/2 tsp salt
2 tbl sugar
1.5 cups milk
2 eggs

Directions: Preheat waffle iron. Melt butter in microwave. In a large bowl, combine dry ingredients and in another bowl, beat together milk and eggs. Whisk wet and dry mixtures together until combined. Stir in melted butter. Spray waffle iron with non-stick spray. Spoon about 1/2 cup of batter onto iron and close to cook. Cook waffle until golden brown. Remove to plate and keep warm. Credit going to chefs at the food network.
