Watermelon Curd

A delicious, and healthy, little dessert. Perfect with a glass of sauvignon blanc on a hot summer night! #NationalWatermelonDay #NationalWhiteWineDay

1 cup watermelon juice
5 tsp corn starch
5 tsp sugar
1 tsp lemon juice
1 tsp white wine
sage & lime zest

Directions: Combine 1/4 cup of watermelon juice with the corn starch and whisk to slightly dissolve. Add to remaining watermelon juice in saucepan and bring to simmer. When simmering add sugar, lemon juice and white wine. Cook for about 8 minutes, whisking frequently. Remove from stove and pour into glass. Place in fridge to let set for at least 4 hours.
