Valentine's Day Sweet Treats

Here are a few sweet treats to make for Valentine's Day! If you love cream cheese frosting, these little candies are an "acceptable" way to eat all the frosting you want! Mini heart cookies, and strawberry shortcake white chocolate chip rounds pair quite well with pink bubbly! Sending love to all on one of my favorite holidays!

Cream Cheese Candies

Cream Cheese Candies
16 oz of powdered sugar (1/2 of a regular sized bag)
8 oz of cream cheese, softened to room temperature
Strawberry Jello

Directions: In a mixer, combine the softened cream cheese with the powdered sugar. Scrape the sides of the mixing bowl and mix until fully combined (and not sticky!). Add more powdered sugar if the cream cheese is sticky. Remove from mixer and divide into two bowls. Leave one plain and add the strawberry Jello to the other, about 1 tbs. Scoop out small balls and roll into sugar. Place on parchment lined sheet tray and refrigerate overnight.

Pink Heart Cookies

Pink Heart Cookies
2 cups flour, plus more for parchment
1/2 tsp baking powder
1/4 tsp salt
1 stick unsalted butter, softened
1 cup sugar
1 large egg
1 tsp vanilla
Red food coloring

Directions: Whisk together dry ingredients. Beat together butter and sugar with a mixer on medium speed until pale and fluffy, about 3 minutes. Beat in egg and vanilla. Reduce speed to low, and gradually add flour mixture, beating until just incorporated. Add food coloring, 1 drop at a time, mixing and kneading to combine. Refrigerate until firm, about an 1 hour. Bring to room temperature and roll dough between 2 sheets of lightly floured parchment to just under 1/4 inch thick. Cut heart shapes. Place cookies 1 inch apart on parchment-lined baking sheets, and freeze until very firm, about 15 minutes. Bake until barely golden brown, about 8 minutes. Let cookies cool completely on baking sheets set on wire racks. Strawberry Shortcake Cookies

Strawberry Shortcake Cookies
1 box of Betty Crocker strawberry cake mix (cake mix content only)
2 eggs
1/2 cup canola or vegetable oil
1 bag of white chocolate chips

Directions: Combine all ingredients in stand mixer. Chill dough for one hour. Bake at 350 degrees for 7 or 8 minutes.
