Cake-Mix Gingerbread Men

When I was a child I remember my aunt used to tie gingerbread cookies to the banister. I thought ti was the most creative, unique way to add food to decor and it the staircase was so beautiful. My uncle used to walk by occasionally and eat a head off or grab a foot. He would slowly dismantle this and the children thought it was hilarious, while my aunt did not. Ever since then I have loved making gingerbread cookies because they make me think of this funny memory. But, they can be tricky to make. Not with this cake-mix recipe, which cuts your time in half and they are delicious!


1 box spice flavor cake mix
1/2 cup flour
2 large eggs
1/3 cup vegetables oil
1/3 cup dark molasses
2 teaspoons ground ginger


Combine cake mix with flour, and ginger in a large stand mixer. Mix eggs, oil, and molasses in a small bowl. Add to stand mixer and let run for 2-3 minutes. Cover with plastic wrap and refrigerate dough at least 2 hours.
Preheat oven to 375 degrees F.
Roll out the dough on a lightly floured surface to a 1/4-inch thickness. Cut with cookie cutters and place on parchment lined baking sheets, allowing 2 inches between cookies. Bake for 8 - 10 minutes. Serve! Or, decorate!
