Cookies and cream ice cream is my favorite flavor, although it has always been a tough draw between that and vanilla with sprinkles. I don’t eat ice cream as often as I should, and when I make these little bars I am reminded of that flavor from the summers as a kid when we rode our bikes to a little shop and choosing one or two flavors felt like the hardest decision we would ever make.
1 (8 ounce) package cream cheese
1 gallon cookies and cream ice cream
In a stand mixer combine cream cheese and ice cream. Beat on high for 5 minutes.
Pour into cake pan and freeze for an hour.
Remove from freezer and top with crushed Oreos.
