Smoked Salmon Bites

Another easy, elegant appetizer for the holidays. Make-ahead and impress your guests with the simple elegance and beauty that this little bite has to offer! This is a great light bite for New Years Eve!


3 English cucumbers, peeled and cut into ½-inch slices
1 (8-ounce) package cream cheese, room temperature
¼ cup crème fraîche (see note)
1 tablespoon horseradish
½ teaspoon lemon juice
1 teaspoon lemon zest
3 tablespoons fresh dill, chopped
Capers, drained (about ¼ cup)
1 pound smoked salmon, cut into bite-sized pieces
Dill fronds for garnish


Using a melon baller, scoop a small depression in the top of each cucumber slice, forming a little cup. Place the cucumber slices on a paper towel to drain while preparing the cream cheese mixture.
In a medium bowl, combine the cream cheese, crème fraîche, horseradish, lemon juice, lemon zest, and chopped dill.
Scoop 1 teaspoon of the cream cheese mixture in the top of each cucumber slice. Sprinkle a few capers on top of the cream cheese. Next add a piece of smoked salmon and top with a dill frond. Serve.
