Host a Tiki and Tilapia Party

It is hot and we are in the middle of summer! That means backyard sprinkler running, slip and slides, bbq's, boats, and front porch hanging. We hosted a get-together complete with Apple-Mint-Inis and spicy tilapia tacos! Both as easy to prepare as they are to consume, and perfect for this hot weather!

Besides the food and drink, the most important thing is the dress! I love this palm filled, floral inspired frock from JCrew! Paired with orange heels, great earrings, and you are good to go!

Our backyard is blooming and as bright green as this mint I found at a local market. Mint is a refreshing herb, that when added to alcohol makes for a delicious herbaceous taste.

I served my take on the "apple-tini" but with mint, fresh apples, and lime. I call it the Apple-Mint-Ini!


3 oz vodka
3 oz apple juice
1 oz lime juice
3 oz soda water
4 slices of apple
3 mint leaves

Directions: Combine all ingredients in a cocktail shaker. Shake. Pour over ice.

Tilapia is a great neutral fish that absorbs flavor, and stays moist, light and flaky when cooked.

Tilapia Seasoning
2 tsp chili powder
1/2 tsp ground coriander
1/4 teaspoon ground cumin
1 lb. shrimp, peeled and deveined
8 (6-inch) corn tortillas
For serving, lime wedges

Directions: Combine the chili powder, coriander, cumin, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a bowl. Pat the fish dry with paper towels, brush with the remaining tablespoon oil, and rub evenly with the spice mixture. Place fish on a preheated grill (or sautee pan). Cook approximately 6 minutes. Fish is done when it is is slightly opaque and can be flaked easily. Remove fish from grill.

For your tacos, make this slaw ahead of time and allow the flavors to come together before serving.

Cabbage Slaw

4 cups shredded green cabbage
4 Tbsp minced fresh cilantro
3 scallions, thinly sliced
2 Tbsp cider vinegar
4 tsp canola oil
salt and pepper

Directions: Toss the cabbage, 1/4 cup of the cilantro, scallions, vinegar, 1 teaspoon of the oil, and 1/4 teaspoon salt in a bowl. Set aside.

To assemble your tacos, find the carrier you prefer (tortillas, taco shells, chips, wontons). Add a spicy mayonnaise (recipe below), your fish, and the slaw.

Spicy Mayonnaise

1/4 cup light mayonnaise
½ Tbsp fresh lime juice
4 Tbsp minced fresh cilantro
1 tsp minced canned chipotle chile in adobo sauce

1/8 tsp garlic salt

Directions: In a separate bowl, combine 1 tablespoon cilantro, mayonnaise, lime juice, chipotles, and garlic and season with salt and pepper to taste. Set aside for serving
