So what did you think of the premiere of The Food Network Star?! If you are like the judges, you would be craving more of my salmon BLT's as well! Here is the easy recipe!
Lay the smoked bacon on a parchment lined sheet tray and bake for 20 minutes at 400 degrees. Each BLT requires 1 or 2 pieces, so plan accordingly depending on how many people you are feeding!
Slice tomatoes and place on a parchment lined sheet tray. Sprinkle with salt, pepper, rosemary and top with garlic and lemon slices. Bake for 30 minutes at 400 degrees. I used 2 tomatoes for 6 BLTs. Tomatoes will shrivel up and cook down so you need more tomatoes then you might think!
1/2 cup mayonnaise
1 tsp grated lemon zest
1 to tbs fresh lemon juice
1 tsp Dijon mustard
2 cloves of garlic, minced
Coarse salt and ground pepper
Portion salmon filet into small 3 ounce portions. Season with salt, pepper and top with lemon zest. Broil for 5 minutes. Salmon will cook quickly!
Toast bread of choice, I used ciabatta rolls. Place 1 tablespoon of aioli on the bottom bun. Top with two tomato slices. Add Salmon on top. Toss arugula with a little olive oil, salt and pepper. Add arugula on top of the salmon and finish with the top of the bun!
